Watermelon Gazpacho

What’s better then a cold Gazpacho soup in the hot summer days. To make it even better is a Watermelon Gazpacho. Gazpacho is a cold soup made of raw blended vegetables. It originated in the southern regions of the Iberian Peninsula  and spread into other areas. Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, as it is refreshing and cool. Most gazpacho include stale bread, tomato, cucumbers, onion, capsicum, garlic, olive oil, wine vinegar, water, and salt. This soup is a perfect balance between sweet and savory, packed with a lot of vitamins and antioxidants, and full of fresh nutritious ingredients. This soup is very refreshing and it takes only 15 minutes to make.

You can make it spicy if you like, for extra heat add your favorite chili (Jalapeno, Serrano, Habanero, Thai Chili etc.)

You can make it up to 2 days in advance, which it is making the perfect starter for any party. Its a Vegan and Gluten free soup and its super healthy. So here is my take on this summer sunshine in a bowl. Grab a few fresh veggies, watermelon and a cold Margarita in your hands and lets blend some delicious soup together. You can also add some Feta Cheese, I think the combination of all vegies, watermelon and feta is really delicious. My secret ingredient is the

V-8 Juice. I think adding it make it even better. You can skipped if you like.

You Need:

Watermelon3 Cups- chopped
Celery Stalks2 roughly chopped
Medium Tomatoes3-4 roughly chopped
Cucumber1/2 medium size English chopped
Yellow Bell Pepper1/2 roughly chopped
Red Bell Pepper1/2 roughly chopped
Jalapeno1 roughly chopped
Red Onion1/2 roughly chopped
Parsley1/2 Cup roughly chopped
V-8 Juice1 cup
Red Wine Vinegar3 Tbsp.
Salt to taste
Black Pepperto taste

Instructions:

Set a side a few pieces of the watermelon and a table spoon of the chopped cucumbers and some of the chopped jalapeno for garnish also I like it for texture as well.

Chopped roughly all the veggies and put it in a blender, add all seasonings and blended until smooth consistency.

Taste and adjust seasoning if necessary. Transfer it in a large container and refrigerated for 2-3 hours.

To serve the gazpacho pour the soup in a bowl or a glass and add the garnishes on top. I like to add some feta cheese.
