Grilled Cheese Sandwich and Tomato Bisque- yes pleas. One of my favorite wintertime comfort soups. Creamy, delicious and so good to warm you up during the cold season. Also my kids love it too so its win-win for me when I struggle to find new ways to give them something fun and nutritious.
I also like to serve it room temperature. Its fun to have it in a small shot glasses when you are having a party with your friends. This little tomato shutters a fun and really awesome way to present this comfort food and elevate it to a new elegant way. Its a easy and delicious and so so good.
You Need:
Roma Tomatoes | 6 | ||||||||||||
Olive Oil | 1/4 cup | ||||||||||||
Salt and Black pepper | to taste | ||||||||||||
Yellow Onion | Medium size | ||||||||||||
Garlic | 2 cloves | ||||||||||||
Dry White Wine | 2 tbsp. | ||||||||||||
Tomato Juice | 2 cups | ||||||||||||
Thyme | 1 sprig | ||||||||||||
Heavy cream | 1/4 cup | ||||||||||||
Butter | 1 tbsp. | ||||||||||||
Instructions:
Pre heat oven to 350 F.
Cut the tomatoes on quarters and lay them on parchment paper . Drizzle with olive oil and season with salt and black pepper. Place in oven and bake for 6-8 minutes. Remove them from oven, let cool and then peel the tomatoes.
Sautee onion and garlic in a hot oil in a medium sized pot over medium-high heat. Add tomatoes and let it cook for a minute. Deglazed with the white wine. Add the tomato juice, thyme sprig and bring to boil. Season with salt and pepper Reduce heat and simmer for 20 minutes.
Remove the pot from the heat and discard the thyme sprig. Blended until smooth. Add the heavy cream and butter a little at a time and whisk constantly. Add a touch of basil aioli if you like.
