Here my friends you will find a similar version of the tomato bocconcini salad, but still very delicious. I know most of you are been eating the classic version, but believe me this one is equally delicious if not even more.
For this tomato basil salad you will need a few ingredients and few minutes and you will have tasty and refreshing salad.
You Need:
Tomatoes | 1 pound | ||||
Persian Cucumbers | 2 small | ||||
Croutons | 1 cup | ||||
Basil | 1/4 cup | ||||
Fresh Parsley | 2 tbsp. | ||||
Feta Cheese | 1/4 cup | ||||
Spring Onion | 1/4 cup |
For the dressing:
You Need:
Olive Oil 4 tbsp. | |||
Salt to taste | |||
Lemon Juice 1 tbsp. | |||
Instructions:
Start with chopping into small cubes the tomatoes, you can use cherry, heirloom or like me cocktail tomatoes, cut the Persian cucumbers and green onions. Place all vegetables into a large bowl. In another small bowl, whisk together the olive, oil, salt, pepper and the lemon juice. You can skip the lemon juice, but I thing brightens the salad. Pour the dressing into the bowl with already cut vegetable and mix together. Add on top the crumbles of feta cheese and the croutons. I like to add the croutons before serving the salad, so they don’t get saggy and stay crispy and delusions. Sprinkle on top fresh chopped basil and parsley.
