This delicious and easy recipe will change your mind about sweet potatoes. I was so tired of trying just the well known recipe for sweet potatoes. Even in restaurants you still get them fried or made a puree of them. I discovered that adding just a hint of garlic and some lemon juice brings a lot flavor to the yams. Adding a little fresh dill and this is a winner dish. It is perfect for side dish or if you are on strict diet this is perfect meal. Make this sweet potato with garlic, lemon juice and dill and you will never try then any other way. Only with few ingredients you can make such a tasty and delicious dish.
You need:
Sweet Potatoes | 3-4 large ones | |||||
Olive Oil | 2-3 Tbsp. | |||||
Salt | 1/2 Tbsp. | |||||
Black Pepper | 1/2 Tbsp. | |||||
Garlic | 1 clove | |||||
Lemon Juice | 1 lemon | |||||
Fresh Dill | 1 Tbsp. |
Instructions:
Pre heat oven to 425 F. In a large pot add the yams and covered with water. Boil for 4-5 minutes- that makes it easy to peel. After that cool them and peel the skin with a small knife. Cut it into juliennes and put it in a large bowl. Add the olive oil, salt and pepper and mix so all the potatoes are well dress. Put it on a baking sheet with parchment paper and roast for 15-20 minutes, while tossing occasionally in order to make them crispy. After they are done take them out of the baking sheet and put in a large serving dish.
In a small bowl add the finely shopped garlic, pinch of salt, fresh chopped dill and the juice of a lemon. Mix well and dress the potatoes with this dressing. Serve while they are fresh out of the oven.
