I will not gonna lie that this is my favorite, breakfast and a lunch to go Toast/Sandwich.
It is healthy, delicious and super easy to make. When i made it for the very first time I was surprise, that my little girl even attempt to try it, After the first bite, she went to eat the whole thing. Well it was approved by my eight years old girl with very sophisticated palate and so I am sharing it with you . You need only few ingredients from the local fresh market and you will have French bistro style dish. You can also serve it for a brunch with your family and friends, its very elegant and sophisticated dish, yet super easy to make and impress everyone. What is good about this recipe is that is vegetarian, dairy free and you can make it to be Gluten free as well.
You Need:
Whole Grain Bread | 2 slices | |||||||
Avocado | 1 | |||||||
Chopped Parsley | 1 Tbsp | |||||||
Lemon Juice | 2-3 tbsp. | |||||||
Olive Oil | 2 tbsp. | |||||||
Salt | to taste | |||||||
Black Pepper | to taste | |||||||
Spinach | 1 cup | |||||||
Red Chili Flakes | a pinch | |||||||
Eggs | 2 | |||||||
Garlic Cloves | 2 |
Instructions:
Start with cooking the spinach. Heat up the skillet to a medium temperature and add a tbsp. or so olive oil and add the spinach ( add finely chopped garlic totally optional) . Start sauté for about 2-3 minutes. Set it a side. In a medium size bowl smashed the avocado with a fork, add the lemon, juice, chopped parsley and 1 tbsp. olive oil, salt and black pepper to taste. You can add if you like some finely chopped garlic. Mix everything well until all ingredients are combine.
Next step is to cook the eggs. For a quick preparation I cook them in a skillet, you can poached them if you want to, totally optional. Get a cast iron skillet and add a spoon of oil of your choice, once the skillet is hot cracked the eggs and fry them. I like my eggs runny so it takes only 2 minutes for them to get done. Once the eggs a cooked take it out of the pan and put it a side. Toast your bread in the oven or in the toaster.
Now its time to assemble this decadent and delicious sandwich. Take the slices of bread and spread on both pieces the avocado spread you made early. Top with generous amount of the the sauté spinach and on top place the egg. Sprinkle with red chili flakes.
