
The flatbread is one of the most common and well known types of bread around the world. In fact, the flatbread is known to mankind since ancient Egypt. Almost every country have its own name and way to prepare flatbread. In Greece they call it pita and can be used to scoop sauces, dips or to prepare the well known gyros. India, Pakistan, Bangladesh, Afghanistan, Malaysia, Indonesia and Singapore prepare naan bread. In Spain they call their thin bread torta. Colombia and Venezuela have its own type called arepa and we are all familiar with the Mexican tortilla. I don’t think you can ever have too many recipes for flatbread in your recipe book. So, here is one simple and yet tasty recipe for flatbread, that you can use to prepare my tasty chicken shawarma recipe.

Instant yeast. | 2 tsp. |
Sugar. | 1 tsp. |
Warm water (about 100 degrees). | 1 cup. |
Warm whole milk (about 100 degrees). | 1/2 cup. |
Bread flour. | 3 and a 1/2 cups, more or less. |
Salt. | 1 and a 1/2 tsp. |
Olive Oil. | 1 tbsp. |
Instructions for preparing flatbread:
- First I want to say, that the most important ingredient when preparing bread is the flour. Although there are many different kinds of flour, my top choice hands down is Five Roses All Purpose Enriched Flour. I have never had any problems with this flour. Always makes the best bread and I highly recommend it to everyone. Amazon is one of the few places that you can find this type of flour. - Now, another important point I need to make is, that humidity, temperature, altitude and multitude can impact how much flour and time the dough would need to rise. Always judge the amount of flour and timing by the texture, feel and look of the dough.

1 – Prepare the dough for your tasty flatbread.
In large bowl mix all the yeast, water, milk, sugar, salt, olive oil and 1 cup of the flour until well combined. Electric stand mixer fitted with the dough hook can make that process faster and easier. I use, love and recommend for its quality KitchenAid K45SSOB 4.5-Quart Classic Series Stand Mixer.
Gradually add the remaining flour until a soft dough is formed. Cover the dough with a kitchen towel. Let it rise until doubled for 1 – 1 1/2 hours.
Divide the dough into 8 equal pieces. Cover the pieces with a kitchen towel and let them rest for 15 min. This will help relax the gluten and make rolling the dough much easier. Working with one piece at a time, on a lightly floured counter, roll the dough about 1/8-inch thick into a large circle, about 7-8 inches in diameter.
2 – We are ready to cook the flatbread.
Heat up non stick griddle or pan to medium heat ( about 300 degrees). Look for the right amount of heat that will cook the flatbread in 2-3 minutes max. per side. Not hot enough and your flatbread can turn out dry. Too much heat will make your bread overcooked, crispy and won’t bend easily. Cover the ready product with towel so it stays soft and warm.
The flatbread is best when served the day it’s made but you can store in freezer for up to one month and reheat gently when needed.
