
This salad is super easy to make. It’s a full course meal itself. For this recipe I like to use smoked chicken. When you combine it with the delicious blue cheese dressing and the crispiness of the apples it’s an explosion happening in your mouth.

You Need:

1. Boston Lettuce | 1 Head. |
2. Green Apples . | 3. |
2. Lemon Juice. | 1 tbsp. |
3. Smoked Chicken Breast . | 12-16 oz. |
4 Carrots. | 1/2 pound. |
5. Celeriac or Celery . | 1/2 pound. |
6. Alfalfa Sprouts . | 1/4 pound. |
7. Seedless Grapes. | 1/2 pound. |
7. Toasted Walnuts. | 1/2 cup. |
For The Dressing:
Seasonings: | Amount |

1. Blue Cheese | 1/3 cup. |
2. Buttermilk . | 3 tbsp. |
2. Sour Cream. | 3 tbsp. |
3. Mayonnaise . | 2 tbsp. |
3. Salt and Pepper . | To taste. |
4 White Wine Vinegar. | 1 tsp. |
5. Freshly squeeze Lemon Juice. | 1 tsp. |
6. Granulated Sugar . | 1/2 tsp. |
7. Garlic Powder. | 1/8 tsp. |
7. Fresh Chives. | 1/8 bunch. |
7. Salt and Black Pepper | To taste. |
Instructions:
To make the dressing mash blue cheese and buttermilk together with a fork in a small glass bowl until the mixture resemble cottage cheese. Stir in the remaining ingredients, and season with salt and pepper to taste. Cover and refrigerate.
Place Boston lettuce leaves on a plates. Arrange several layers of apple slices, smoked chicken, julienned carrots and celeriac or celery.
Top the salad with the remaining vegetables and small bunches of alfalfa sprout.
Garnish with the halved grapes and toasted walnuts. Drizzle with blue cheese dressing
