Shrimp And Bacon Salad with Yogurt Dressing

Shrimp are truly our family’s favorite. They are so many ways to be prepared- boiled, baked, grilled, broiled or fry. So many ways to cook them and no surprise they are call the fruit of the sea. It doesn’t matter which way are cooked we love having shrimp for lunch and dinner. Perfect for being on a diet, shrimp is high in calcium, iodine and protein.

One of my favorite ways to have shrimp is on salad. Add some bacon, mix greens and healthy yogurt sauce and you have a explosion of fresh, healthy and delicious flavor in every bite. It is a perfect choice for a Dinner, Lunch and a amazing choice for party. You can prepared everything in advance.

You Need:

Shrimp1 pound
Bacon1 cup
Mix Green Lettuce
Lemon Zest1/2 tsp.
Salt to taste
Black Pepperto taste
Garlic powder1/2 tsp.
Onion powder1/2 tsp.

For the Yogurt Dressing:

Yogurt 1/2 cup
Lemon Juice 2 Tbsp.
Minced Garlic 1-2 cloves
Fresh Dill 1 Tbsp.
Salt To taste
Feta Cheese 1/3 cup

Instructions:

Start with making the dressing. You can prepared even the night before, the longer sets the better it taste. Combine in a medium size bowl yogurt, chopped dill, lemon juice, minced garlic, feta cheese , salt and a zest a little of the lemon. Mix together everything, cover it and put it in the fridge.

Seasoned the shrimp with salt, black pepper, onion and garlic powder. I like to use devein shrimp, but if you don’t have already devein, make sure you clean them before cooking.

Cut the bacon into small pieces and fry in a cast iron skillet until crisp. Remove from pan and transfer into a plate lined with paper towels. Reserve the bacon fat in the skillet. Add the already seasoned shrimp and cook through about 2-5 minutes. It takes 2 minutes a side. Make sure to don’t overcooked the shrimp, otherwise they will be very tough. Remove from the pan and let it a side to slightly cool down.

In a meantime get a large plate, add the mix green and drizzle the yogurt dressing. Add the still warm shrimp, top with the crispy bacon and sprinkle lemon zest. You can add blue cheese or feta cheese on top and will make it even better.
