This Recipe is proving that simplicity works in the kitchen and creates amazing results. Before we start making this dish you need to know a few thing that will help you to make this succulent pork dish.
First you need to get good quality pork chops. You can get boneless or bone in. I personally prefer with the bone, gives more flavor and the meat is juicy and tender. You can also use loin chops, their are leaner tan the center cut. Either one will do the magic.

You Need:
Pork Chops | 4 Thick in size
Portobello Mushrooms | 8 oz.
Onions | 2 Large | ||||||||
Kosher Salt | 1/3 tsp. | ||||||||
Black Pepper | 1/3 tsp. | ||||||||
Fresh Parsley | 2 tbsp. | ||||||||
Olive Oil | 3 tbsp. | ||||||||
Instructions:
To start cooking the meat, I always like to leave it in room temperature for 20 minutes and seasoned with salt( a little bit heavier). This is call dry brining and helps the pork to not just get more tender but crispy as well. After that dry the meat with kitchen paper. Season again with a little bit salt and fresh cracked black pepper.
Heat your skillet, I preferred to use iron it gives nice seared on the meat. Add a 2 tbsp. olive oil and when is hot enough add the pork chops.
In mean time start slicing the mushrooms and the onion. Let the chops cook on each side for 4 minutes and take it out of the pan and let it rest. In the same pan, add the rest of the olive oil and add the mushrooms and onion. Let it sauté for 4-5 minute or until they get this nice golden color and caramelized. Put the chops back in the pan and sprinkle with fresh chopped parsley. Get the toasted ciabatta bread and dig in. The only think you need to complete this meal is a cold brew.
Enjoy!
