Salmon Salad with White Sesame Dressing

You Need:

Ingredients: Amount
1. Frisee Letuce. 2 oz.
2. Cucumbers . 2.
2. Baby Watercress. 2 oz.
4 Mesclun or Mix Greens. 6 oz.
5. Sprouts . 4 oz.
6. Masago . 3 oz.
7. Salmon . 1 pound.
7. Black Sesame Seeds. 1 tbsp.
6. Tabiko . 4 tsp.

For The Dressing:

Seasonings: Amount
1. Toasted White Sesame Seeds 1/4 cup.
2. Granulated Sugar . 1/4 cup.
2. Dark Soy Sauce. 3 tsp.
3. Bonito Stock . 1/2 cup.
3. Ponzu Sauce . 2 tbsp.
4 Chili Sesame Oil. 1 tsp.

Instructions:


To make the dressing, mix all the ingredients in a small bowl.

In advance, cut the skinless Salmon into a cubes and the cucumbers into a lengthwise slices.
In a large bowl combine all the ingredients for the salad and toss with dressing.
Arrange salad in a nice bowl (preferably chill), sprinkle with the toasted sesame seeds, and garnish with a spoonful of tobiko.

You can pair this salad with Martini or nice chill white wine like Pinot Gris or Sauvignon Blanc.

Serve 4 portions.
