For the pasta lovers, this recipe is the perfect choice. Over the years I’ve being making so many different pasta recipe, but some how this one stands out as one of my favorite. This Recipe features creamy sauce, penne which is perfect for this type of sauce, because allows the sauce to cover every bite of the short pasta. It is easy to make during the week nights and delicious.
If you like the flavors but prefer different type of protein or just veggies you can always substitute.
You Need:
Penne Pasta | 8 oz. | |||||
Chicken breast or tights | 2 | |||||
Shrimp | 1 pound | |||||
Mushrooms | 1 cup | |||||
Shallots | 1 | |||||
Butter | 1 tbsp. | |||||
Garlic | 2 cloves | |||||
Olive Oil | 1-2 tbsp. | |||||
Thyme | 1/2 tsp. | |||||
Heavy Cream | 3 cups | |||||
Fresh Parsley | 1 1/2 cups | |||||
Parmesan Cheese | 1/2 cup | |||||
White Wine | 1/3 cup | |||||
Salt and Black Pepper | to taste | |||||
Onion and Garlic Powder | 1/3 tsp. | |||||
Green Peas | 1/2 cup |
Instructions:
Start with preparing the chicken and shrimp. Cut the chicken om little strips and if you don’t get the scrimp without shell and devein you need to do it. Sprinkle salt and black pepper, onion and garlic powder and mix well.
In mean time cook your pasta according package instructions.
Heat a a large pan and sauté the chicken first. Cook it until you get a nice golden color and remove it from the pan. I n the same pan cook the shrimp as well . If necessary add more olive oil and cook shrimp on each side for a minute or until they start getting pink color. After they are done remove them and put a side. Add a little olive oil and a 1 tbsp. butter in the same pan and sauté mushrooms for a few minutes and then add the the chopped shallots and sauté for a additional minute or two. Add garlic and sauté for 1 minute. Add the White wine and cook for a minute, add heavy cream, thyme, salt and pepper.
Let it boil for 30-40 seconds then turn low and add the freshly grated Parmigiano-Reggiano. Continue cooking the sauce on low simmer heath. Add frozen peas and let them cook in the sauce .Or if you are using fresh peas cook them in a salted water for about 5 minutes and add them in the end. Cook until slightly thickened turn off the heat and add the fresh parsley and cooked Chicken, Shrimp and penne pasta. Sprinkle some more fresh parsley and if needed add more salt and pepper and is ready to be served. If you like a little heath you can sprinkle some red crush pepper on top.
