Asparagus is a vegetable known since ancient times not only for its taste, but also healing properties. They are a good source of potassium, vitamin C and have anti-oxidant properties. Today asparagus are prepared worldwide in many different and tasty ways. The most often use is as an appetizer, salad, side dish or as a main vegetable mainly in the Chinese cuisine. I really love asparagus and one of my favorite ways to enjoy them is as tasty asparagus and tomato salad. Quick, easy and delicious salad, a healthy choice for everyone.
|Tomatoes.||2 medium size.|
|Olive oil.||4 tbsp.|
|Feta cheese.||For a salty bite.|
Wash the asparagus and season with pinch of salt, black pepper and 3-4 tablespoons of olive oil. You can cook them on the grill or in frying pan for 3-4 min. until nicely browned and tender-crisp. When ready, arrange them in plate with tomatoes seasoned with salt, black pepper and olive oil. If you like, you can sprinkle feta cheese for a salty bite.
