
Green leaf lettuce is an annual plant and one of my favorite to make salad. These plants are low in calories and low in fat, but high in protein per calorie, iron, dietary fiber, calcium, phytochemicals, vitamin C, vitamin A, lutein, and folic acid. The green leaf partners well with cucumbers, radishes, tomatoes, avocados and red or green onion. The following recipe is very simple but healthy and refreshing.

Leafy green lettuce. | 1 bunch about 8 ounces. |
Cucumber. | 1. |
Radishes. | 6 medium-sized. |
Avocados. | 2. |
Green onion. | 2. |
Italian parsley. | 2 springs. |
Kosher salt. | To taste. |
Lemon juice. | From 1 lemon. |
Extra vrgin olive oil. | 2 tbsp. |
Instructions:
This is a very easy to prepare salad. Wash and cut all the vegetables. In small bowl mix the dressing. Juice of 1 lemon, 2 table spoons olive oil, finely chopped parsley, pinch of salt. Pour the dressing over your vegetables. You can also add some cherry tomatoes for sweet flavor and color.
