The right meat:
You can make chicken bites with chicken breast but if you want to prepare the best chicken bites, I will suggest getting boneless, skinless chicken tights. Now, when it comes down to the meat you should always get the best possible quality, otherwise you can always stop by the frozen section of your local grocery store and get deep frozen chicken nuggets. Look for local and cage free raised chicken meat. Organic with no hormones and no antibiotics. Always leave frozen meat in fridge to defrost prior to cooking.
Prepare marinade for your meat:
Cut the meat into nugget size pieces. Leave the meat in the marinade for a minimum of 2 hours. I marinate the meat with tbsp. salt, tsp. black pepper, tsp. garlic powder, tsp. onion powder and 2-3 Maggi Seasoning Sauce . Squeeze the juice of half a lemon and leave to marinate in refrigerator.
First prepare the breading. Mix two eggs and about 1/2 a cup of flour. Put a pinch of salt, black pepper and half a cup of beer. Deep the chicken bites in the breading.
Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few drops from the breading dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, about 5 min. per side. Drain on a paper towel and serve hot with lemon or lime.
