Are you a fan of the meatballs as I am? Do you love meatballs as I do? They are so delicious and versatile dish to make. You can make them with pork, beef , chicken, turkey and even with fish. They are such a easy, tasty and fun dish to prepared for your family and friends. My kids love them and is always fun time to make them. You’ll love this version of the meatballs. This recipe is low on calories and carbs. For this recipe I use ground chicken, but you can substitute with ground turkey. Usually you see the meatballs to be made with curry sauce or coconut, but I want it to make something different, so I came up with the red pepper sauce. This sauce it’s easy and the good part is it doesn’t take a long time to prepare. You need only few ingredients for the sauce and you can even freeze it and use it for later.

For the Curry Meatballs

You Need:
For the Red Pepper Sauce
Red Bell Peppers | 3 | ||||||
Yellow Bell Peppers | 3 | ||||||
Onion | 1- Medium size | ||||||
Garlic cloves | 2 | ||||||
Fresh Chopped Parsley | 1 Tbsp. | ||||||
Cauliflower | 1 Head | ||||||
Olive oil | 3 Tbsp. | ||||||
Salt and Pepper | To taste | ||||||
White wine | 1/4 cup |
Instructions:
In a large bowl combine the ground chicken and all the ingredients to make them. Gently mix everything together, but make sure not to over mix it, otherwise the meatballs will become tough. I like to cover it and leave it for 30 minutes before i form the meatballs and cook them. In mean time start preparing the sauce.
In a large sauté pan over medium high heat the olive oil and add the chopped peppers and onion. Sprinkle with salt and pepper to taste. Sautee for a few minutes until they are soft and add the garlic. Cook it for 30 more second and deglaze with the white wine. Add the chopped fresh parsley and remove it from the stove. Let it cool down and then put it in the blender and puree to a smoot sauce.
Pre heat oven to 425 F.
Start forming the meatballs. I like to use my hands, but you can use a big scoop to make them as well.
I always wet my hand before forming the meatball, that way the mixture doesn’t stick to your hands. Because we are using a very lean meat you can use olive oil or if you prefer water. Form the meatballs and put it on a bake sheet and bake it in pre heat oven on 425 F. Bake it for 15-18 minutes or until caramelized outside and cook inside. Take out from oven and put serve immediately. I like to bake cauliflower and add to the meatballs and red pepper sauce.
Cut the cauliflower into small florets coated with olive oil, seasoned with salt and black pepper and bake on 450 F for 10- 12 minutes or until they get some chard on it.
On the bottom of a bowl put the roasted red pepper sauce add the curry meatballs and the roasted cauliflower. You can also add a gluten free pasta to make.
