It took me some time to start liking the curry , in fact I really didn’t like it for years. Now I am one of those people who is trying different recipes with curry. Out of all recipes I made with curry, this one is my top favorite.
I just love the combination of the sweetness of grapes, the curry and the chicken. Adding fresh lemon juice and crunchy celery is brightening the flavor and create this perfect combination of flavors. You can use stope bought chicken , but honestly I like when I make my own. I marinated the chicken with my favorite spice mix I made my self and curry.

Chicken Tights | 2-3 large | ||||||||

Mayonnaise | 3/4 cup | ||||||||

Curry Powder | 2 Tbsp. | ||||||||
Garlic Powder | 1/2 Tbsp. | ||||||||
Paprika | 1/2 Tbsp. | ||||||||
Onion Powder | 1/2 Tbsp. | ||||||||
Dijon Mustard | 1 tbsp. | ||||||||
Croissants | 4 |

What makes this recipe to stand out and makes it better is that I marinated the chicken tights.
Here is how to cooked the chicken:
Start with coating the chicken tights with a 1 Tbsp. olive oil, add 1 Tbsp. Curry powder, 1/2 Tbsp. garlic and onion powder, 1/4 tbsp. paprika and juice of 1/2 lemon. Make sure all the seasoning is coating the meat and let ist sit for 15-20 minutes.
Pre heat oven on 425 F and put the meat to roast for 15 minutes or until cooked. Let it cool and then chopped it and put it in a medium size bowl.
To the already chopped chicken add the chopped celery, onion, and grapes. Add the mayonnaise, Dijon mustard , the juices from the chicken that was cooked earlier and rest of the seasonings. Mix well and let it sit in the fridge for at least 30 minutes.
To assemble the sandwich cut on halves the croissants and top it with the chicken salad. If you like to skip the extra calories and gluten you can choose a green leaf lettuce and make it as a wrap.
