Larger then the regular couscous, but smaller to the pasta, Israeli Couscous cooks up in a minutes. Served it as a side dish, as a bad of chicken or fish, or make it a savory salad like the one I am sharing with you today. This salad is so easy and tasty to make. You can have it preparade in advance and keep it in your fridge over night. This salad is perfect for your busy week day lunch or dinner.
To get really flavorful couscous you need to cooked it in a chicken or vegetable broth or if you prefer to cooked it in a water, but infused it with saffron.

TIPS FOR SUCCESS

- Always add the butter or olive oil to the couscous when you’re preparing it.

Creamy Couscous Salad with Salami and Corn
Ingredients
- 1 3/4 cup chicken stock or water
- 1 1/2 cups sweet corn - cooked
- 1 1/2 cups dill pickles - chopped to small pieces
- 5 0z. salami or ham - chopped to small pieces
- 1/2 cup Kalamata olives - halved
- 1/4 cup mayonnaise
- salt - to taste
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- black pepper - to taste
- 1 tbsp. fresh chopped parsley
- 1 tbsp. fresh chopped dill
Instructions
Prepare the couscous:
- Follow the packaged instructions to prepare the couscous.
- In a large bowl combine couscous, Kalamata olives, corn, salami, dill pickles, fresh chopped parsley,fresh chopped dill all the seasonings and the mayo. Combine well all ingredients.
- If necessary adjust seasonings and if needed add more mayonnaise to your taste.
- Refrigerate for at least 1 hour.
