This recipe is very close to the authentic version of this soup. While I was working in the culinary industry one of the Mexican cooks in the kitchen shared this recipe that comes from the recipe book of her grandmother.

There is nothing that soothes the soul and warms you up (both figuratively and literally) like a big bowl of this Chicken Tortilla Soup. The Chili powder and fire-roasted tomatoes give, what could be a boring bowl of soup, a unique twist. Also, with my other few special ingredients such as the tequila and the chipotle in adobo you will get a combination that transforms what could otherwise be a bland bowl of soup into a complete experience.
TIPS FOR SUCCESS AND TECHNIQUES
- To speed up the cooking use a rotisserie chicken – the # 1 ingredient for all home cooks
- Don’t skip to use the chipotles in adobo. It’s the smoked flavor of this dry canned jalapenos, packed with heat but with plenty of balance and body, that will satisfy your soul.
- Use Tequila. YES, we are using Tequila and it makes all the difference in the flavor of the broth
We load our soup with more protein by adding black beans, vegetables , corn, bell peppers and more. We like to load it up with avocado, tortilla croutons, and sour cream but really, any of your favorite nacho fixings would work. Also, try fresh jalapeños and thinly sliced radish! At this point you can add whatever you like. That is the other reason we love this soup. You can put any toppings, as much as you want, and it will taste fantastic.

Tequila | 1/3 cup | |||||||||||
Cumin | 1 tsp | |||||||||||

Instructions:
Heat the olive oil in a large Dutch oven over medium heat. Add the onion, garlic, bell peppers, green chilies and cook for 2-3 minutes. Add the chicken tights, chipotle in adobo and cook for a 3-5 minutes. After that, add the tequila and cook for 1 minute.
Add the rest of the soup ingredients to the pot and bring to a boil. Turn down the heat to medium-low and simmer for 30-35 minutes.
Meanwhile, make tortilla crisps: In a large skillet over medium heat, heat oil. Add tortilla strips and cook until crispy and golden (3 minutes). Transfer to a paper towel-lined plate and season with salt or use your favorite tortilla chips.
Serve the soup topped with tortilla crisps, avocado, sour cream, cilantro, and lime.
