Prepare all of your ingredients first, as this recipe cooks quickly!

You Need:

Ground Chicken1 pound
Yellow Bell Pepper1
Spring Onions 2 sprigs
Peanut or Sunflower Oil2 tbsp.
Carrot1

For the Sauce:

Soy Sauce3 tbsp.
Hoisin Sauce 3 tbsp.
Sesame Oil1 tbsp.
Rice Vinegar 1 tbsp.
Honey1 tbsp.
Peanut Butter1 tbsp.
Sweet Chili Sauce2 tbsp.
Garlic Clove Graded1-2 cloves
Ginger Graded1 tbsp.
Siracha sauce 1 tbsp.

To serve:

Peanuts
Green Onion chopped
Chili Pepper (optional)
Boston Bibb Lettuce or your favorite salad

Instructions:

Whisk together all the ingredients for the sauce until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.

Heat up your wok or choice of pan, and add the 2 tbsp. of oil. Once your pan is hot, add ground chicken.

Cook until some pieces are starting to brown. Add onion, peppers, carrots and cook for 5 minutes or until the vegies are cooked through. Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.

Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!
