You Need:
Ground Chicken | 1 pound | |||
Yellow Bell Pepper | 1 | |||
Spring Onions | 2 sprigs | |||
Peanut or Sunflower Oil | 2 tbsp. | |||
Carrot | 1 |
For the Sauce:
Soy Sauce | 3 tbsp. | |||||
Hoisin Sauce | 3 tbsp. | |||||
Sesame Oil | 1 tbsp. | |||||
Rice Vinegar | 1 tbsp. | |||||
Honey | 1 tbsp. | |||||
Peanut Butter | 1 tbsp. | |||||
Sweet Chili Sauce | 2 tbsp. | |||||
Garlic Clove Graded | 1-2 cloves | |||||
Ginger Graded | 1 tbsp. | |||||
Siracha sauce | 1 tbsp. |
To serve:
Peanuts | ||
Green Onion chopped | ||
Chili Pepper (optional) | ||
Boston Bibb Lettuce or your favorite salad |
Instructions:
Whisk together all the ingredients for the sauce until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.
Heat up your wok or choice of pan, and add the 2 tbsp. of oil. Once your pan is hot, add ground chicken.
Cook until some pieces are starting to brown. Add onion, peppers, carrots and cook for 5 minutes or until the vegies are cooked through. Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!
